淋酒點火、40秒現蒸和牛！ 鍋物「桌邊秀」吸睛
鍋物料理，業者用桌邊秀，先征服客人視覺，用柴魚片跟昆布沖燙湯頭，和牛在桌上現蒸40秒，或是龍蝦擺在600度石頭上，淋酒點火，在桌邊料理也增進與客人互動；另一家烏骨雞石頭火鍋，倒入整瓶米酒再點火，火焰料理秀，也吸引民眾拍照打卡，增加店家曝光度。店員：「宜蘭的玉露茶去做沖泡，可以先喝喝看。」客人上座，除了品茶湯活絡味覺，杯底雕刻栩栩如生的金魚，更吸睛。店員：「這邊是柴魚片跟玉露茶葉。」柴魚片煮久容易苦，業者用沖燙的方式，保留香氣原味，不像其他店家，整鍋端上桌，吃和牛鍋物，還要有視覺享受。和牛融點比較低，業者用蒸，取代涮肉，更能留住和牛鮮甜，包著甜蒜再撒點鹽，口感多層次，美食鍋邊秀還有下一道。龍蝦擺在600度石頭上，蓋鍋蒸4分鐘，高溫加上淋兩種酒，多了酒氣也鎖住肉汁，或是店員幫你涮肉，捲剝皮辣椒，業者主打一整套桌邊服務。頂級鍋物業者 郭建億：「絕不是沒有任何緣由說我們想這樣做，只是為了浮誇為了炫，而是說它有它的道理在，或料理的基礎在。」麻油拌炒薑片，下鍋的烏骨雞五分熟起鍋，再把米酒當湯頭，店家再放當歸、紅棗等中藥材，但重頭戲在後頭。火焰料理，豬肉也拼成玫瑰花瓣造型，石頭火鍋業者把桌邊秀時間拉長，增加跟客人的互動。石頭火鍋主廚 陳俊豪：「會造成一些視覺上衝擊的效果，然後客人就會錄影拍攝，也會打卡。」相機先吃美食的年代，業者把桌邊料理當作新舞台，眼睛先看秀本周最新優惠，嘴巴才有口福。
